Spring Mix Poppy Seed Salad

My first salad post. Crazy, I know. 

 

This recipe came from a salad I tried at Boston Pizza. It was just so good I had to make it myself and share with everyone. 

 

This salad contains pumpkin seeds and did you know that pumpkin seeds are a great source of magnesium and zinc!? Magnesium is important for healthy bones and teeth and zinc is important for the activation of enzymes that are required to make proteins all over your body including hair, skin and nails. 

1 Serving 

Ingredients:

  • 3 cups Spring mix salad

  • 1 tbsp. Raw or toasted pumpkin seeds

  • ½ tbsp. Sunflower seeds

  • 2 tbsp. Dried unsweetened cranberries

    • Or your can use fresh fruit like strawberries or blueberries!

  • ~1tbsp. Goat cheese

  • 3oz. Chicken

  • Poppy seed dressing to taste

 

Directions

  1. Combine all ingredients and enjoy! :)
