Spring Mix Salad with Tomato Garnish 

Need a simple yummy side dish to you meat and potatoes? Prepare and add this salad to your dish in just minutes! Adding veggies to your meals can be as simple as this. 

If you have sweet potatoes and chicken, bake them with just a little bit of salt and pepper then toss it all together like this photo for a nice sweet and savoury complete meal. To make this meal vegan, you can marinate tofu in a balsamic vinegar and honey sauce before baking and use a vegan feta cheese. 


Serves 1


  • 2 handfuls spring mix salad

  • 1 tsp. Balsamic vinegar or to taste

  • ½ tsp. Honey or to taste  

  • 1 handful cherry tomatoes, cut in half

  • 2 tbsp. crumbled feta cheese

  • 1 green onion sprig, sliced 

  • ½ tbsp. olive oil



  1. Toss the spring mix salad with the balsamic vinegar and honey until evenly coated.

  2. In a small bowl mix together the remaining ingredients then add this to your salad as a garnish.

  3. Enjoy :)
