Roasted Rosemary Potatoes
This recipe is perfect for any kind of night! A family get together, a BBQ night or even just to meal prep for the week. With just a few SIMPLE ingredients these potatoes taste crisp and flavourful.

If you want to cook these on the BBQ just wrap them in a bunch of tin foil and let cook for about an hour rather than on a pan in the oven.
Ingredients
-
Mini white and/or red potatoes (as many as you like!)
-
Olive oil
-
Dried Rosemary – or fresh rosemary!
-
Salt and pepper
Directions
-
Preheat oven to 425F
-
Wash and dice the potatoes into bite-sized pieces – leave the skin on for added fiber!
-
Lightly drizzle on some olive oil to coat the potatoes.
-
Add salt, pepper and rosemary until desired amount.
-
You don’t need a lot of rosemary, just lightly sprinkle to give it the flavour.
-
If you are using fresh rosemary, you will need to add a little more than the dried.
-
-
Bake for 30-40min or until desired tenderness and crispness, stirring them half way.
-
Enjoy :)
