Granola
This may be the one and only granola recipe I ever post on here. It is adapted from one of my favourite food blogs - Minimalist Baker. I had a friend show me this recipe and I don't think I could try any other recipe, it's just so amazing!
You can eat this granola by itself, or you can add it to your favourite yogurt, or what I love to do is eat it with a sliced up banana, peanut butter and a sprinkle of hemp hearts. Mmmm!
Ingredients:
-
1½ cups Large flake oats
-
½ cup Unsweetened coconut flakes
-
½ cup Raw slivered almonds
-
½ cup Raw pecans halves OR walnuts halves OR your favourite nut
-
1 tbsp. Coconut sugar
-
¼ tsp. Salt
-
3 tbsp. Coconut oil
-
â…“ cup Maple syrup
-
1 tsp. Pure vanilla extract
-
¼ cup Dried fruit - optional (I used raisons)
Directions:
-
Preheat oven to 325F
-
Combine and stir oats, coconut flakes, almonds, pecans, coconut sugar and salt in a large mixing bowl.
-
Add the coconut oil and maple syrup to a small pot and warm over medium heat to melt the coconut oil completely.
-
Add the vanilla extract to the pot and whisk so that everything is totally combined.
-
Pour over the dry ingredients and stir until all the dry ingredients are completely coated.
-
Pour onto a baking sheet and press into an even layer.
-
Bake for 25 minutes – do NOT stir the granola while it bakes. This will give the granola that chunky end-product. Watch so it doesn’t burn. You want the granola to be golden brown and smell absolutely delicious!
-
You can either let the granola cool completely before enjoying in your yogurt/with your banana and peanut butter or you can snack on it as is while it’s still warm because it’s just too good ;)
-
Enjoy :)
