Granola

This may be the one and only granola recipe I ever post on here. It is adapted from one of my favourite food blogs - Minimalist Baker. I had a friend show me this recipe and I don't think I could try any other recipe, it's just so amazing!

 

You can eat this granola by itself, or you can add it to your favourite yogurt, or what I love to do is eat it with a sliced up banana, peanut butter and a sprinkle of hemp hearts. Mmmm!

Ingredients:

  • 1½ cups Large flake oats

  • ½ cup Unsweetened coconut flakes

  • ½ cup Raw slivered almonds

  • ½ cup Raw pecans halves OR walnuts halves OR your favourite nut 

  • 1 tbsp. Coconut sugar

  • ¼ tsp. Salt

  • 3 tbsp. Coconut oil

  • â…“ cup Maple syrup

  • 1 tsp. Pure vanilla extract

  • ¼ cup Dried fruit - optional (I used raisons)

 

Directions:

  1. Preheat oven to 325F

  2. Combine and stir oats, coconut flakes, almonds, pecans, coconut sugar and salt in a large mixing bowl.

  3. Add the coconut oil and maple syrup to a small pot and warm over medium heat to melt the coconut oil completely.

  4. Add the vanilla extract to the pot and whisk so that everything is totally combined.

  5. Pour over the dry ingredients and stir until all the dry ingredients are completely coated.

  6. Pour onto a baking sheet and press into an even layer.

  7. Bake for 25 minutes – do NOT stir the granola while it bakes. This will give the granola that chunky end-product. Watch so it doesn’t burn. You want the granola to be golden brown and smell absolutely delicious!

  8. You can either let the granola cool completely before enjoying in your yogurt/with your banana and peanut butter or you can snack on it as is while it’s still warm because it’s just too good ;)

  9. Enjoy :)
