Goat Cheese & Avocado Stuffed Chicken

I'm a HUGE goat cheese fan, and stuffing it in chicken with avocado is delicious.

This recipe also includes a sweet side to go with it. Made with the combination of honey and balsamic vinegar it makes a perfect combination for vegetables and quinoa. This side also freezes well so you can make multiple batches and store it in the freezer for future meals. I love convenience.
