Classic Energy Balls

These little energy balls are perfect to fuel your gas tank to keep you going in between meals. They are a great energy source providing you with protein, fibre and essential omega fats!

This recipe is quick and easy, in fact it only takes about 10 min. They are a great convenient snack and making double or even triple batches to store in the freezer makes it that much more convenient!

They are also very flexible for ingredients to your preference of taste or food values. For example they can be made a nut free ball by using tahini butter instead of peanut butter, or a vegan ball by using agave instead of honey. Also if you wanted to you can add nuts or dried fruit or chocolate chips, its up to you! :)

Makes ~18-22 balls

Ingredients:

  • 1 cup Oats

  • 2/3 cup Unsweetened coconut flakes

  • ½ cup Natural peanut butter

    • Or any kind of nut butter

    • Or tahini butter for a nut free ball

  • ½ cup Ground flaxseed

  • 1-2 tbsp. Chia seeds

  • 1/4 cup Honey

    • Or maple syrup, or agave

  • 1 tsp. Vanilla

  • Chocolate Chips (optional)

Directions:

  1. Combine all ingredients into a bowl and stir until mixed.

  2. Add more peanut butter or honey if the mixture doesn’t hold together to form balls.

  3. Roll into 1” balls, flat mini bars, or any shape you’d like!

  4. Separate into snack baggies with 2 balls as a serving for a snack.

  5. Store in the fridge. They also freeze very well, so you can double or even triple the batch store in the freezer.

  6. Enjoy! :)
